Gluten Free, High Protein CHEEEEEESY Taco Rice

Just HAD to share this recipe, it’s my new go to when I’m feeling lazy sooooo yum!

Cheesy taco rice 496kcal, 36g protein!

Ingredients (4 portions):

- 500g lean beef mince

- 240g dry rice

- 60g grated cheese

- 1 red or white onion

- 1 veg or beef stock cube

- Tablespoon tomato puree or ketchup

- Taco seasoning mix (make sure its gf with no may contains)

OR to make at home just generously season with:

- Paprika & smoked paprika

- Salt and pepper

- Garlic granules

- Cumin

- Chilli flakes (to taste)

Optional serve with: tortilla chips, salsa, sour cream, guac, sriracha mayo (but remember to track)

Method:

- Dice onion and fry off in a large deep frying pan

- Once softened add the beef mince and brown

- Season the beef mince

- Wash the rice and add to the pan with a large coffee mug of stock

- Add the ketchup or tomato puree

- Mix everything up put a lid on, then leave to simmer until the rice is fluffy and cooked through

- If looking dry just add some more water a bit at a time

- Top with grated cheese, put the lid back on and let it melt
